# How To Make It:

02 - Add remaining 1 tablespoon olive oil to the skillet. Sauté chopped onion for 2 minutes until softened. Add sliced mushrooms and cook, stirring occasionally, until golden and moisture evaporates, about 5 minutes.
03 - Incorporate minced garlic and fresh thyme into the skillet, cooking until fragrant, about 1 minute.
04 - Stir in potato gnocchi and cook for 2 to 3 minutes, allowing it to toast slightly.
05 - Pour in chicken broth and heavy cream, scraping up browned bits from the bottom. Return browned sausage to the skillet and bring mixture to a gentle simmer.
06 - Fold in baby spinach and half the grated Parmesan cheese. Season with salt and freshly ground black pepper to taste.
