Simple Homemade Grain Vegetable Soup (Printable)

# How To Make It:

01 - Rinse the grains thoroughly under cold running water to remove any impurities.
02 - Heat olive oil in a large pot over medium heat. Add diced onion, sliced carrots, and celery. Cook for 5 minutes until vegetables begin to soften.
03 - Incorporate minced garlic and cook, stirring frequently, for 1 minute until fragrant.
04 - Add rinsed grains to the pot and toast for 1 to 2 minutes, stirring continuously to enhance flavor.
05 - Stir in diced zucchini, chopped green beans, cherry tomatoes, vegetable broth, bay leaf, dried thyme, and oregano. Bring mixture to a boil.
06 - Reduce heat to low, cover pot, and simmer for 30 to 35 minutes until grains and vegetables are tender.
07 - Remove bay leaf. Stir in fresh parsley and optional lemon juice. Season with salt and pepper to taste.
